Easy and simple fun for kids, especially if they love to help in the kitchen.
This is a very simple cupcake recipe and will keep the kids occupied decorating their delicious masterpieces.
1 3/4 cups self-raising flour
2/3 cup caster sugar
125g butter, melted and cooled
2 eggs
1/2 cup milk
1 tsp vanilla extract
1. Preheat oven to 200°c. Line a 12-hole medium muffin tray with paper cases.
2. Combine self-raising flour and caster sugar in a large bowl. Whisk butter, eggs, milk and vanilla extract in a bowl. Add butter mixture to flour mixture and gently stir until combined.
3. Divide batter evenly between paper cases. Bake for 15-20 minutes or until cakes are cooked through when tested with a skewer.
4. Transfer to a wire rack to cool. When cold, decorate as desired.
If wanting to make this vegan and/or gluten free omit the eggs for egg replacer or apple sauce and the flour for gluten free flour.
There are a huge range of Christmas decorating tools available at your local supermarket and if you don’t want to make your own icing – whip butter and icing sugar together until you get your decided quantity/taste- you can even buy pre-made icing if you wanted to also.
I let the boys loose with their decorating and then their eating of their masterpieces. This is even perfect to whip up on Christmas day, especially if you have a bunch of children at your event and need to keep them occupied or want them to make a separate dessert.
