I love eggnog, always have and I like it just as much when it’s been veganised. I’m yet to find a vegan eggnog in stores as of yet, I know a number of American companies make it but I’m yet to see it here in Australia.
This is a simple vegan eggnog recipe which is perfect poured over some ice.
1 can coconut milk
1/2 cup raw cashews
1/4 cup water
3 tbsp maple syrup
1/4 tsp ground nutmeg
1/4 tsp ground cinnamon
Soak the cashews overnight or for at least 1 hour.
Place all the ingredients in a blender and blend until smooth.
Chill in the fridge until ready for serving.

How long do you think it’ll keep in the fridge?
Yes it’s super easy. I think it would be okay for about 3 days in the fridge.
