This is a perfect little dish, it’s so easy plus you can use whatever you have in your fridge and add a little of this and that. I love this salsa and it has a permanent little home in my fridge, as I find it goes with a lot of meals and is ideal for a quick snack.
2 capsicums, diced
1/2 cup red onion, diced
2 medium tomatoes, diced
1 cup coriander, roughly chopped
1 cup corn from the husk, rinsed and drained
I avocado, diced
1 can black beans, rinsed and drained
zest of a lime
1/4 cup lime juice
1/2 tsp cumin
1/2 tsp garlic powder
1/4 tsp smoked paprika
1/2 tsp Himalayan pink sea salt
Sprinkle black pepper
Instructions
Put all the vegetables in a large mixing bowl. Mix well to combine.
In a small bowl, whisk together the lime juice with the salt, cumin, garlic powder, smoked paprika, lime zest, and pepper. Pour the sauce over the salsa.
Perfect for use as a dip for corn chips or crackers, ideal for tacos and great as a side dish too.
