Halloween is over.

Get those decorations up, start the gift list and Christmas baking can begin!
The first recipe of the season is going to be gingerbread. I love how delicious, warming and comforting gingerbread tastes. It always reminds me of winter and Christmas festivities.
You will need:
½ c gluten free flour
½ c rice flour
1 tbsp tapioca starch
2 tbsp ground ginger
1 tsp ground cinnamon
1 ½ tsp baking powder
¾ tsp xanthan gum
¼ tsp salt
1 tbsp oil
1 egg
3 tbsp molasses
2 tsp vanilla extract
¼ c milk
¼ c plain Greek yogurt
1/3 c brown sugar
Preheat the oven to 160 degrees celsius and line a loaf tin with baking paper.
In a bowl, whisk together the dry ingredients. In a separate bowl, whisk together the oil and egg. Mix in the remaining wet ingredients, then tip in the flour mixture.
Sir until just combined.
Pour the batter into the prepared pan, and bake for 40-45 minutes, or until a skewer inserted into the centre, comes out clean.
Cool in the pan for 10 minutes before turning out onto a wire rack to cool completely.
