Pumpkin Pie Slice

Just in time for Thanksgiving or for Christmas. This slice is perfect for the health conscious or as a tasty light dessert. 
You will need:
1 cup wholemeal flour
1/2 cup almond meal
1/2 cup Natvia for Baking
1 tsp cinnamon 
1 tsp bicarbonate of soda
1 mashed banana
1 cup mashed pumpkin
4 eggs
Icing:
1/2 cup silken tofu
200g cream cheese
1/2 cup Natvia for Baking
Cinnamon for decoration
Preheat the oven to 180 degrees- fan forced.
Mix the dry ingredients together and in a separate bowl whisk together the wet ingredients.

Once thoroughly combined stir in the dry mix to the wet and beat well.
Line a slice try with baking paper & using a spatula spread the mix firmly around the dish.
Bake for 15-20 minutes or until firm & golden.
While the slice is baking whizz the cream cheese, Natvia & tofu in a food processor until thick & almost like whipped cream.
Once the slice has baked, cooled & been cut into squares, spread the whipped icing over the cake & sprinkle with extra cinnamon.

Homemade Lollies

So this was a bit of an experiment & although they didn’t quite turn out as well as I hoped, I know better for the next attempt.

I made them carrot shaped to keep with the healthy theme & they do contain pumpkin. 
We had fun with the recipe though & hopefully I will have a fool-proof step-by-step guide soon.
These were also 100% vegan & contained 6 calories & barely any fat.

Pumpkin Spice Smoothie

Pumpkin.
I love the stuff. Especially roasted.  I love it when it gets that almost blackened crust & it tastes even better the next day.
Everything seems to be pumpkin orientated at the moment, especially with ThanksGiving in the USA coming up- I keep seeing Pumpkin Spiced Lattes on all my American friends’ Facebooks.
Since we don’t celebrate ThanksGiving & it’s warm here I went for the smoothie option. 
Pumpkin Spiced Smoothie
In a blender add 
100g frozen Pumpkin
1 frozen Banana 
1.5 cups Almond Milk
1 tbs Agave
Dash of cinnamon & ginger

Blend.

There is a vague taste if pumpkin but the banana & agave make this a sweet morning pick-me-up & even my nearly four year old son went back for seconds.
Pumpkin is so versitile & easy to use as a sweet or savoury.  After all I’m pretty sure the Americans make a sweet pie out of it!
