Frozen Yoghurt Cups

Perfect for the warm weather & a healthy alternative to sugar laden ice cream.

You will need:
2 cups fat free greek yoghurt- 
I used Chobani
2 tbs Natvia Natural Sweetener
1 cup Blueberries-
Or berries of your choice

Mix all the ingredients in a bowl until the Blueberries & Natvia are thoroughly combined in the yoghurt.

Spoon the mixture into patty pans placed into a muffin tin. 
Add a few extra blueberries to the top if you like! 
Freeze overnight.
Enjoy! 
Perfect as a healthy, yet sweet treat!

Pumpkin Pie Slice

Just in time for Thanksgiving or for Christmas. This slice is perfect for the health conscious or as a tasty light dessert. 
You will need:
1 cup wholemeal flour
1/2 cup almond meal
1/2 cup Natvia for Baking
1 tsp cinnamon 
1 tsp bicarbonate of soda
1 mashed banana
1 cup mashed pumpkin
4 eggs
Icing:
1/2 cup silken tofu
200g cream cheese
1/2 cup Natvia for Baking
Cinnamon for decoration
Preheat the oven to 180 degrees- fan forced.
Mix the dry ingredients together and in a separate bowl whisk together the wet ingredients.

Once thoroughly combined stir in the dry mix to the wet and beat well.
Line a slice try with baking paper & using a spatula spread the mix firmly around the dish.
Bake for 15-20 minutes or until firm & golden.
While the slice is baking whizz the cream cheese, Natvia & tofu in a food processor until thick & almost like whipped cream.
Once the slice has baked, cooled & been cut into squares, spread the whipped icing over the cake & sprinkle with extra cinnamon.

Fernwood Fitness

Last month I was lucky enough to WIN a three month membership to Fernwood Fitness thanks to Natvia Natural Sweetener & Fernwood Fitness.

A gorgeous pack of Natvia goodies & a gift certificate from Fernwood arrived in the mail & so I headed to my local gym to redeem. 
I’ve never attended a Fernwood before, and have always wanted to, so I was very excited.  Fernwood has always sounded like the perfect place to workout & I hear they spoil their members. And they do, I mean, they even have candles in the change rooms; peaceful ambience, provide hair dryers & straighteners and I get offered a hot towel while exercising!
This place is almost like an indoor paradise for ladies.  Breakfast is even provided in the morning, one of the selections is Chobani- and I love Chobani!
Everything at Fernwood is neat & clean.
There’s even a crèche for the kiddies, ironing boards, deodorant, hair spray & q tips.
Fernwood offer tons of classes too, including yoga, belly dancing, body step, body balance, pump & aerobics.
The staff are just gorgeous. Very helpful & welcoming & often ask how training is going. 

There’s a generous variety of work out equipment & a complementary assessment is provided along with a personal & group training session.
I’m looking forward to my Food Coach session too, which involves meal plans & suggestions for any weight related issues.
A friend of mine luckily attends Fernwood so I have a gym-buddy, which is great!
Some of the things I’m loving most so far is that Fernwood is not jam packed with people, the music isn’t ridiculously loud & the other gym goers are considerate.
There’s an informative Fernwood magazine too, it’s got the usual advertisements but it’s not full of page after page of items for me to buy & the articles and write ups are interesting and actually worth reading.
It’s been a good excuse to stock up on some gym-wear too as I don’t own much  in the way of work out clothes. I think Fernwood should start selling their own tees and singlets too.

Bought the coolest Asics runners from Sportsco too. Loving the comfort & support when I run on the treadmill… lol when I run…I mean walk very fast.
Fernwood Fitness is definitely an excellent choice of gym for Women- sorry boys- and I’d highly recommend visiting your local club & giving it a go.
I’m hoping to get the chance to participate in the new Fernwood Angels programme which is tackling fitness & weightloss from all different angles over a 28 day process. Guys- you can join in on this too- it’s all online!

Cheesecake Pudding

Are you looking for a bowl full of guilt free goodness? A dessert that actually tastes good but is low in fat, calories & sugar free?

I had a play around with ingredients and came up with a dessert that’s light, sweet & if you eat the entire bowl, that includes licking the beaters, you’re actually not going to feel guilty!
You will need:
130g low fat plain cottage cheese
1/4 cup Unsweetened Almond Breeze 
4 tbs Natvia Icing Mix
2 tsp Vanilla Essence

Using a food processor, or like me a hand whisk as my son is asleep, blend the ingredients until smooth and thick.

Refrigerate for 20 minutes and then serve. 

Yep, that’s it.
I sprinkled mine with some crushed cookie. Slicing fruit & using it as a dip is great too. Although just spooning it into your mouth works just as well too!
Recipe yields 4 small servings at 37.5 calories a serve.
Ooooor eat all 4 serves for 150 calories, 4g of fat & 13g protein.

Orange Cupcakes

These are super refreshing, spongey and very light. Almost like you’re not consuming a traditional cupcake.
You Will Need: 
1/2 cup freshly squeezed orange juice
80 g melted butter
1/2 cup Natvia For Baking
2 eggs
1 cup self raising flour
1/4 cup Unsweetened Almond Breeze
For the Icing:
100g softened butter
1 tsp orange rind
1 cup Natvia Icing Mixture
1.5 tbsp freshly squeezed orange juice
Pre heat a fan forced oven to 180 degrees.

Beat the orange juice, butter, Natvia, Almond Breeze & eggs. Once quite smooth add the flour and mix well.

Line a cupcake/muffin tray with party pans and spoon two tablespoons into each mould. 

Bake for 10 minutes. Cakes should be golden and spring back to the touch.
Remove from oven and leave in try for 5 minutes before removing to cool on a wire rack.

While cupcakes are cooling make the butter cream icing. Using electric beaters combine all ingredients until smooth and fluffy. 
Once cupcakes are completely cool ice with an icing bag or use a knife for something simpler.
Enjoy by themselves or with your late night almond milk cuppa. 

Beetroot Relish

I had discovered Beetroot Relish a few months ago & was embracing it with foods as much as I could…

But alas, the jar now runs empty..
Time to create my own.

Ingredients-
2 large beetroots, peeled & grated
1 Granny Smith apple, peeled & grated
1 cup red wine vinegar
1 small onion diced
3/4 cup Natvia for Baking
1 tsp cumin seeds
Salt & pepper

In a large saucepan cook down the beetroot, apple, onion, cumin seeds & vinegar until soft & cooked through. This should take about 15-20 minutes on a medium heat.

Mix in the Natvia until dissolved & then add the salt & pepper to taste.

Cook for another 15 minutes until much of the liquid has evaporated. You will be left with a thick mixture with pungent beetroot scents.

Leave to cool and then transfer to a container or sterilised jar and refrigerate.
Enjoy warned or cold with salad, bread, crackers or tossed through pasta.

Berry & Coconut Slice

Delicious & Sugar Free using Natvia Strawberry Drinking Mix. 

You will need:
Base:
1/2 cup Vitarium Sugar Free Strawberry drinking mix
1 cup whole meal flour
1 1/2 cups mixed berries
80g Nuttlex or butter
Topping:
1/4 cup Vitarium Sugar Free Strawberry drinking mix 
1 1/2 cups shredded coconut
2 eggs
To create the base pre heat the oven to 180 degrees. In a bowl mix the flour (I used wholemeal) & Strawberry Vitarium.

Zap the berries in the microwave so you can mash them with a fork easily, and add to the dry ingredients with the butter, melted.
Once combined spread evenly in a lined slice pan and bake for 15 minutes.
While the base is cooking create the topping. 
In a separate bowl mix the two eggs, coconut & extra Strawberry Vitarium. I added a dash of vanilla too.
Once the base has cooked and feels spongey to the touch, slowly spread the coconut topping over the base.
Bake again for 20 minutes or until golden. Allow to cool in the tin for 10 minutes & then gently place onto a wire rack. 
Once thoroughly cooled, slice & enjoy!
