The Wee Man wanted Tacos for dinner, so we picked up some Mexican seasoning, salsa & taco shells.
Brown 500 grams of extra lean pork mince then add 1 cup of grated zucchini & 1 cup of four bean mix & 1 cup of creamed corn. Once softened add 1 jar of mild salsa.
Add 2 tablespoons of Mexican seasoning & 1/2 a cup of water.
Once cooked warm the taco shells & then fill with spinach, mince mixture & top with sour cream & grated cheese.
Quick, easy & a better option to traditional mexican tacos.
Made these 87 calorie bites with only a few ingredients and they turned out delicious and cooked in about 20 minutes.
The recipe could easily to altered to include chicken or vegan meats & is easily made into a gluten or dairy free version.
Start by cutting out circles in your choice of wrap or pita bread– I used a can of food- and place in a cupcake tin.
In a separate bowl mix 1 egg & 2 heaped tablespoons of salsa or salsa and bean mix. I used a variety made by Edgell.
Add to the mix 1 piece of shortcut bacon. Combine and spoon onto the pita rounds.
Top each bite with a small slice of cheese or grate some on top.
Bake at 180 degrees celsius for 20 minutes. I made 4 bites with this recipe.
