Made a light snack today, super easy and quick with some things I had in the fridge.
This was easy to do with some mini capsicums and about two tablespoons of light cream cheese.
I added a teaspoon of honey & 10 crushed pistachios. Mix and then stuff each capsicum. This made four little bite sized capsicums and were sweet and salty.
Made these 87 calorie bites with only a few ingredients and they turned out delicious and cooked in about 20 minutes.
The recipe could easily to altered to include chicken or vegan meats & is easily made into a gluten or dairy free version.
Start by cutting out circles in your choice of wrap or pita bread– I used a can of food- and place in a cupcake tin.
In a separate bowl mix 1 egg & 2 heaped tablespoons of salsa or salsa and bean mix. I used a variety made by Edgell.
Add to the mix 1 piece of shortcut bacon. Combine and spoon onto the pita rounds.
Top each bite with a small slice of cheese or grate some on top.
Bake at 180 degrees celsius for 20 minutes. I made 4 bites with this recipe.
